Starting in early May, a refrigerated truck will wend its way from Tomales to San Francisco twice or thrice a week, bringing milk from Toluma Farms to its newest venture: a creamery and bagel shop in in the city’s Dogpatch neighborhood. Hadley Kreitz plans to drive the truck and run the 5,000-square-foot creamery of the Daily Driver—so named because its owners think of its wares as “a go-to, everyday comfort.” Ms. Kreitz started work as an apprentice at Toluma Farms and Tomales Farmstead Creamery five years ago, serving as cheesemaker, herdswoman and events coordinator in turns. Part of the impetus for opening the Daily Driver, said Tamara Hicks, who co-owns the farm and creamery with her husband, David Jablons, is to give employees like Ms. Kreitz opportunities for growth. “We want to give them the chance to not just make low wages but to build wealth to be able to live in the Bay Area,” she said. Figuring out how to manage the growth of the creamery—expanding vertically and tapping potential without adding more animals—was also a factor, as was Mr. Jablons’s desire for a good bagel on the West Coast. (Mr. Jablons and Ms. Hicks, who split their time between San Francisco and Tomales, purchased the property, which was previously a family-run dairy, in 2003.) The Daily Driver will offer Toluma Farms’s typical cheese offerings—soft and aged sheep and goat cheeses—along with Ms. Kreitz’s passion products, including cultured butter and quark, a creamy German cheese similar to yogurt. The shop will also sell by-products of the cheese-and-butter making process, including buttermilk and ricotta. As Toluma Farms is a strictly sheep-and-goat operation, all of the cow’s milk needed for butter will come from Toluma’s neighbor, the Silva Family Dairy, a Jersey cow ranch run by sixth-generation farmer Marissa Thornton. The bagels, which are inspired by New York and Montreal varieties, will be shaped, boiled and wood-fired at the Daily Driver. The Daily Driver will be open every day from 6 a.m. to 3 p.m. at 2535 Third Street, in San Francisco.
