Food lovers hitting the Point Reyes Farmers Market at the right time (10 a.m.) this Saturday will have the opportunity to listen in on a spicy conversation about the state of meats. The man known as America’s meat guru, Bruce Aidells, founder of Aidells Sausages, television host and cookbook writer, will join West Marin’s own David Evans of Marin Sun Farms and KWMR food and agriculture program host Robin Carpenter for a discussion about the new and improved world of meats and butchery inside Toby’s Feed Barn. Mr. Aidells’s latest book, The Great Meat Cookbook: Everything You Need to Know to Buy and Cook Today’s Meat, addresses what Ms. Carpenter calls a dramatic new world of meat. “The biggest change is in grass-fed and pasture-raised meats, particularly beef. It’s a completely different flavor profile, the density and texture is different, the marbling, the way the fat runs through the meat. These meats need to be cooked differently,” she explained. Samples of Marin Sun Farms will be on hand. The conversation will last one hour.
