4 cups raw apples

1/2 cup canola oil

2 eggs 2 cups flour

2 cup sugar

2 tsp baking powder

2 tsp cinnamon

1/4 tsp salt

1 cup walnuts

1 tsp vanilla

Dice apples. Break eggs over apples; mix with spatula. Add sugar, nuts and oil. Whisk, then sift, flour, salt, baking soda and cinnamon, then add to apple mixture. Add vanilla. Grease and flour Pyrex baking dish. Bake at 325 for 50 to 60 minutes.  

May was born into the Italian Bordessa family on a ranch in Marshall. When she was 12, the family moved to the Bay Ranch. May met and married the love of her life, Dick Velloza, in 1949 and together they shared 65 wonderful years in Point Reyes Station, where they raised their sons Bob and Mike. May is the proud grandmother of Jake Velloza, who left his life in Mosul, Iraq in 2009. All are welcome to join her and others at a coffee hour for goodies such as this apple cake, along with conversation and community, following the regular 9 a.m. Sunday mass at Sacred Heart Parish, in Olema.
